Proportions

Watched the documentary below yesterday, and cleared up some
confused notions for myself re trans fats and acrylamide
(the former is fat that clogs the arteries, the latter is what burned food
turns into and is  potentially cancerogenic).

The whole exercise is fun: what is it about chips that makes them
so enticing (even to lab rats)? Turns out the oil absorption is such - at some
30-odd percent, along with 40% carbs - that it creates  the proportions in a
food that make them the optimal fuel for the human body.
