Made a Thanksgiving pumpkin pie yesterday. The locals stores don't seem
to have any for Canadian TKs on Monday. I went all out and blind-baked the crust
beforehand. The crust is not soggy. Also added melted butter to the filling: not
such a good idea. Or maybe it is because I just threw in some cinnamon and nutmeg
instead of working a spice mix. The pie lacks the 'twang' one associates with the real
thing. Still, it's got perfect texture!!
