Real !?

Made a new vegetable dish for myself. Potato pancakes are a stapple of German cooking: shedded potato, onion, flour, egg.One makes little pancakes and fries them in oil; serve with applesauce in the Fall.

My version here is more Chinese in inspiration. There is no egg in it (the sandwich got the egg). I wet the mixture with half water, half soy sauce. The pancake is a bit difficult to work with , but the taste is okay. That was the purpose of soy sauce for the Chinese: to recall the taste of meat in a period when it was forbidden. In effect, soy sauce is complicated to make but releases amino acids. It gives a taste of meat which is real !?
